Bob Jackson—Founder

Bob Jackson is one of California’s longest‑running and most respected fair concessionaires, known for his signature char‑broiled corn and his commitment to using only the freshest, direct‑from‑the‑grower ingredients. His dedication built a loyal following at county fairs across the state.

Before becoming known as the Original Corn Guy, Bob worked alongside his parents in the fair, restaurant, and bar business, serving everything from deli sandwiches and comfort foods to ice cream and classic fair favorites. Since 1971, his famous corn‑on‑the‑cob became a staple for generations of fairgoers.

Ownership & Future Direction

Robert Jackson Enterprises, DBA Giant Fair Foods, is entering its next chapter with a focus on innovation, tradition, and continued partnership with California fairs. As the business transitions to the next generation, Bob’s daughter Jeanette “JJ” Vieira and son‑in‑law Dennis Vieira are carrying forward the legacy he built while introducing new ideas, modern efficiencies, and fresh guest experiences.

As lifelong participants in the fair industry, both Dennis and JJ have grown alongside the business—working at the grills, supporting food preparation, handling behind‑the‑scenes logistics, and contributing to marketing, branding, and operations over the years. Today, they bring a blend of hands‑on experience, strong company culture, and modern, tech‑savvy leadership to the organization. Their goal is to preserve the traditions fairgoers love while continuously bringing exciting new concepts and exceptional service to fairs statewide.

Jeanette “JJ” Vieira — CEO

JJ leads the company’s strategic and administrative direction. Her responsibilities include:

  • Overseeing business operations, branding, and compliance
  • Managing vendor relationships, fair applications, documentation, and annual contracting
  • Guiding marketing, design, and customer‑experience improvements across all stands

With a background in creative direction and small‑business management, JJ brings a modern, guest‑focused approach to the brand while honoring the standards her family established.

Dennis Vieira — CFO & COO

Dennis oversees the operational and technical side of the business. His responsibilities include:

  • Managing day‑to‑day concession operations, logistics, bookkeeping, and kitchen systems
  • Overseeing equipment, setup, fire‑code compliance, and inventory coordination
  • Training staff on food‑safety procedures and ServSafe practices

With experience as a restaurant line cook and in mobile‑kitchen, high‑volume service environments, Dennis brings practical expertise and innovation to each fairgrounds location.
